VINE: 100% Favorita (Rorero region).
EXPOSURE: Southwest.
ELEVATION: 280 m. above sea level.
TYPE OF CULTIVATION: Guyot low Piemontese, on a plot of approximately 0.90 hectares of vines.
SOIL: Prevalent sandstone, marl- sandstone kinds of sedimentary rocks from the sea, with a significant amount of calcar, clay and sand, of course, which makes the soil particularly soft and permeable.
PLANTING: 1988
CLIMATE: Charaterized by wet currents from the south or the Atlantic Ocean, 
precipitation levels are among the lowest in this area, between 650 and 720mm. per year, with maximum seasonal rains in the spring and in late autumn and the minimum during the months of July and August.
HARVEST: Handpicked and put into plastic buckets.
DATE OF HARVEST: From September 10-23, 1999.
AVERAGE GRAPE YIELD PER HECTARE: 85 Quintals (about 4.25 tons).
WINEMAKING: Begins after gentle removal of the stems and stalks to avoid breaking the grapestalks and grape seeds, which, otherwise, would damage the wine quality. Skins and must should not be kept in contact for too long; if not, negative polyphenols will appear. Then clearing is performed through filtering and refrigeration. Fermentation is, at last, carried out with yeasts at a controlled temperature of 18/20° C, followed by stabilisation and decanting.
AGING: 2 month in-bottle.
BOTTLING DATE: February 22, 2000.
